CHICKEN MEATBALLS

Recipe Kids will love:

Preheat oven to 350 F and spray muffin tins.

Mix together: 

  • Ground chicken breast or turkey (lg package or 2 regular size packs)
  • 2 Tb olive oil
  • 1/2 onion finely chopped or Tb dried onions
  • 2 Celery stalks or Tb celery seed
  • 1/2 c. grated Parmesan
  • 1/4 c. ketchup
  • 1 c. seasoned beadcrumbs
  • Salt & pepper & seasoning of choice
  • 1/2 cup carrot puree (make ahead of time - cook carrots and blend)

Spoon into muffin tins.

SAUCE ON TOP:

Mix in small bowl:

  • 1/4 c. ketchup
  • 1/4 c. water
  • Tsp dry mustard
  • 1/2 c brown sugar

Put a spoonful on each meatball and cook for 25 minutes.

When you add the carrot puree into the meatball mix, they come out moist and tasty.  The topping makes them wonderful!  Kids will eat them everytime.
